Super Food Guacamole - Kale, Watercress, Walnuts and Pomegranite - corn free chips

This is a powerful and colorful bowl of fresh, crisp, goodness - rich in antioxidants, vitamin and minerals - E, K, C, A and B iron, calcium and zinc to name a few.

5 organic ripe avocados
1/2 pomegranate cleaned and seeded
5 leaves of Lacinato kale (massaged with kosher salt until tender) chop
1 Small bunch of watercress (chopped)
1 Small bunch of fresh cilantro (chopped)
1 organic garlic clove (diced)
Juice of 1 lime
Juice of 1 clementine (seasonal)
Handful of Organic Raw Walnuts (chopped)

Mash 5 avocados in a bowl removing veins, pit and any dis-colored flesh. mash until smooth and creamy.
Add garlic and citrus juice from lime and clementine. Mix in all chopped ingredients and nest the watercress for decoration on top of bowl garnish with a few walnuts add pink Himalayan salt to taste.

serve with Corn free chips such as dried vegetable chips, beet, sweet potato and parsnips or for a fresh crisp palate enjoy with Chinese cabbage leaves cut in halves, long way - jicama and apple slices.
